Our Spring Lunch Menu

Spring Salad with Strawberries and Pecans
 
Makes 8 servings
Ingredients
  • 6 cups mixed lettuces
  • 1 pint strawberries, hulled and quartered
  • 4 ounces goat cheese, crumbled
  • ½ cup toasted pecans, chopped
  • Champagne Vinaigrette
Instructions
  1. Evenly divide greens, strawberries, goat cheese, and pecans among 8 salad plates. Drizzle with Champagne Vinaigrette just before serving.

 
Champagne Vinaigrette
 
Makes 1 cup
Ingredients
  • 1 shallot, minced
  • ¼ cup plus 2 tablespoons olive oil
  • ½ cup champagne vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
Instructions
  1. In a small bowl, combine all ingredients, and whisk until blended.
