Cucumber Tea Sandwiches
 
Makes 12 servings
Ingredients
  • 3 ounces cream cheese, softened
  • 2 tablespoons fresh dill
  • ½ teaspoon kosher salt
  • ¼ cup mayonnaise
  • 12 slices thin whole wheat bread
  • 1 medium cucumber, finely sliced
Instructions
  1. In the work bowl of a food processor, pulse together cream cheese, dill, and salt until well combined. Spread mayonnaise onto half of bread slices, and set aside. Spread cream cheese mixture over remaining bread slices, and top with cucumber and prepared mayonnaise bread slices. Cut crusts from bread and discard. Cut sandwiches diagonally into 4 triangles and serve.

 
Pimiento Cheese Sandwiches
 
Makes 12 servings
Ingredients
  • 1 cup sharp Cheddar cheese
  • 2 ounces cream cheese, softened
  • ½ cup mayonnaise
  • 1 (4-ounce) jar chopped pimientos, drained
  • ¼ teaspoon ground red pepper
  • 12 slices thin white bread
Instructions
  1. In a medium bowl, stir together cheese, cream cheese, mayonnaise, pimientos, and ground red pepper until well combined. Divide pimiento cheese mixture among half of bread slices. Top with remaining bread slices. Cut crusts from bread and discard. Cut sandwiches diagonally into 4 triangles and serve.
