Spinach, Pear, and Blue Cheese Salad with Riesling Vinaigrette
Makes 8 to 10 servings
2 tablespoons Riesling wine
1½ tablespoons lemon juice
2 tablespoons extra-virgin olive oil
½ teaspoon Dijon mustard
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 (9-ounce) bag baby spinach
1 cup parsley leaves
2 large Bosc pears, sliced
4 ounces blue cheese, crumbled
1.In a large bowl, whisk together wine, lemon juice, olive oil, mustard, salt, and pepper until combined. Add spinach and parsley; toss to coat. Top with pear slices and blue cheese.
Note: Serve the rest of the wine with this course to complement the light flavors of the salad. If you can’t find Bosc pears, you can use Comice or Anjou varieties.
