Orange Muffins

Orange Muffins
Makes 1 dozen

½ cup butter, softened
¾ cup sugar
2 large eggs
1 tablespoon orange zest
¼ teaspoon orange extract
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 cup buttermilk
Orange Glaze

1. Preheat oven to 375°. Spray a 12-cup muffin pan with nonstick cooking spray
2. In a medium bowl, beat butter and sugar at medium speed with an electric mixer until fluffy. Using a spoon, stir in eggs, orange zest, and orange extract until well combined.
3.In small bowl, whisk together flour, baking soda, and salt. Add flour mixture and buttermilk to butter mixture, stirring just until dry ingredients are moistened and combined. (Overmixing will cause muffins to be tough.) Scoop batter into prepared pan, dividing evenly among muffin cups.
4. Bake for 18 minutes or until a wooden pick inserted in center of a muffin comes out clean. Cool in pan on a wire rack. Pour Orange Glaze over muffins, if desired.
