A typical cooking class menu includes two entrée recipes and a dessert. The main dishes offered at Crescent City Cooks include: jambalaya, seafood gumbo, chicken and andouille gumbo, étouffée, red beans and rice, shrimp Creole, bananas Foster, and bread pudding, all using Nita’s recipes. “These dishes are the essence of New Orleans,” she says. “It is what has been passed down for generations.”

With quintessential recipes passed down from both sides of her family, Nita found her best training to be right in her own kitchen. “I come from foodies on both sides of my family. My training has been my whole life,” she says. “It’s what we do when we are together—cook and eat!” Now thousands of people each year from all over the world find a seat around Nita’s table to learn and enjoy the art of Crescent City cooking. “I love sharing the love of cooking with others, and giving them great tasting quality food,” she says.
