To help support the seasonal vegetable production, Lauren built a large greenhouse and bought an existing business that raised wheatgrass, sprouts, and microgreens. Local restaurants and wholesalers became steady customers, and Lauren gradually expanded, adding hoop greenhouses to grow cold-weather crops year-round and to start her own plants from seed. Now, in addition to the sprouts and greenhouse greens, she cultivates 30 acres of seasonal fruits and vegetables, which she sells to local restaurants and wholesalers, at farmers’ markets, and through a Community Supported Agriculture program that allows the public to buy a subscription to receive a box of seasonal products from a local farmer.
