Pimiento Cheese Sandwiches
Makes 12 servings
  • 1 cup sharp Cheddar cheese
  • 2 ounces cream cheese, softened
  • ½ cup mayonnaise
  • 1 (4-ounce) jar chopped pimientos, drained
  • ¼ teaspoon ground red pepper
  • 12 slices thin white bread
  1. In a medium bowl, stir together cheese, cream cheese, mayonnaise, pimientos, and ground red pepper until well combined. Divide pimiento cheese mixture among half of bread slices. Top with remaining bread slices. Cut crusts from bread and discard. Cut sandwiches diagonally into 4 triangles and serve.
