
Cheddar-Bacon Mini Muffins
Makes about 2 dozen
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
¼ cup melted butter
¾ cup whole buttermilk
2 tablespoons honey
¼ teaspoon vanilla extract
1 cup shredded sharp Cheddar cheese
½ cup crumbled cooked bacon
- Preheat oven to 400°. Spray a 24-cup mini muffin pan with nonstick cooking spray.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In a medium bowl, whisk together butter, buttermilk, honey, and vanilla. Gradually
stir buttermilk mixture into flour mixture until combined. Fold in cheese and bacon. Spoon batter evenly into muffin cups. Bake for 10 minutes.
