
Apricot Thyme Cooler
Makes 6 to 8 servings
8 single-serving green tea bags
5 cups hot water, divided
1 cup sugar
1/2 bunch thyme
2 cups apricot nectar, such as Looza
1 fresh peach, cored and cut into wedges
1 cup fresh blackberries
Garnish: fresh thyme
1. In a pitcher, combine tea bags and 4 cups hot water. Let stand for 10 minutes. Remove tea bags, and let cool.
2. In a medium bowl, combine remaining 1 cup hot water and sugar. Stir until sugar dissolves. Add thyme, and let stand 30 minutes. Strain mixture through a wire-mesh sieve, discarding solids. (Mixture can be refrigerated up to 1 week.)
3. Add sugar syrup, nectar, peach wedges, and blackberries to tea. Pour over ice, and garnish with fresh thyme, if desired.
NOTE: Substitute peach nectar for apricot, if desired.
