One myth Nita hopes to dispel is that Cajun food does not necessarily mean the food is spicy. “I have been eating in Cajun homes for 28 years now, and I have never had a spicy meal. Cajun is simply a balance of bold flavor,” she says. “I don’t know when this, ‘Cajun food is hot with spice’ came about, but even people who know better allow this myth to continue. The myth is so big now that the younger generation of Cajuns believe this and spice up their food because they think it is what they have to do.” Nita confesses that while she loves spicy food herself, when it comes to teaching classic Cajun recipes, “I stick to the old way of doing things.”
